Broccoli Cheese Soup is my favorite soup. If you have followed my earlier posts, you know that I have not always been a big fan of soups. Broccoli Cheese Soup was always my exception, though. Anytime it was on a menu, I would usually order it.
This winter I have decided I want to make a crockpot meal once a week. Something about having food cooking throughout a cold winter day feels so cozy to me. Plus, the recipes are usually easier and it typically makes leftovers for my family. Soups are obviously easy things to whip up in a crockpot, so I decided to give my favorite soup a try!
I have attempted Broccoli Cheese Soup before, but was never satisfied with the result. I usually tried to reduce the calorie content by using low-fat products. While some recipes I can get away with using low-fat ingredients and it leaves the taste/texture unchanged, for me, this soup just does not taste the same when I start swapping out ingredients. For that reason, I opted to use full-fat ingredients for this one. Feel free to try reduced-calorie products throughout or for some of the ingredients if lowing the calorie-content would fit better into your diet.
This soup turned out delicious! I was so thrilled to finally make a version of my favorite soup at home that my whole family enjoyed. Although, I still could not get my mother to try it! But to be fair, she is not a big fan of cheese…
When making this for your family, consider switching up the ingredients slightly. Use different cheeses (or throw in whatever you have on hand like I did for this one!), mix in celery, exchange the chicken broth for vegetable broth for a truly vegetarian soup, or even serve it in a bread bowl!
This soup is satisfying enough on its own or it could be paired with a side salad or bread. The soup will last for several days in the fridge. Be sure to keep it in an airtight container and simply reheat in a microwave or stovetop.
