Hopefully, I am not the only one who does not enjoy eggs for breakfast, but would still like a filling, warm meal to start the day. Since I do not like eggs, most warm, eggless breakfast recipe ideas leave me with two options: pancakes or French toast. Everything else is either egg-based or comes with a side of eggs to make it “complete”. I love pancakes and French toast, but sometimes I want something different!

Recently, I came up with another breakfast game changer, this Hash Brown and Sausage Breakfast Casserole! So, to all of you who also dislike eggs, I got you! And, to those who need eggs with their breakfast, you can add it to this recipe as well! Win-Win!
If you want to include eggs, scramble them separately, breaking into small chunks and then sprinkle on top of the sausage mixture, top with cheese, then bake.
To lower the calorie content, use ground turkey sausage and low-calorie/low-fat shredded cheese. Less calories, but same great taste!
This casserole can be made ahead of time and just reheated the morning you want to eat it. If you have leftovers, they will keep for several days! Keep leftovers in an airtight container in the fridge, then reheat for 30 minutes at 350 degrees.
Serve this dish alone or with fruit or a biscuit. Our whole family is loving this new breakfast addition so much, we made it twice in one month with plans to already make it again! We hope you enjoy it too!
