I was not a fan of soup until I met my husband. To him, soup was a perfect, quick meal, but to me, it was boring. Soup never left me satisfied, so why would anyone make it for dinner? Well, it turns out, I was just eating all the wrong soups! I am so sorry to all the soups I have prematurely judged. Guess I have a little catching up to do in the soup department!

While there are tons of soups I am now excited to make, this one will be hard to beat. This Creamy Sausage Tortellini soup will turn any non-soup lover into a fan. It certainly changed my mind!

The creamy tomato and spinach broth makes a nice backdrop for the pillowy cheese tortellini and hearty sausage. One bowl makes a great meal for lunch or dinner. Leftovers will keep for 2-3 days in the refrigerator or freeze for up to three months. If freezing, make as usual, let cool, then place in freezer safe container. When ready to eat, defrost in the fridge overnight, then reheat in a saucepan on the stovetop.

Creamy Sausage Tortellini Soup

If you are looking for a new soup to try this winter, look no further! This soup will keep you warm all night long with its hearty ingredients and creamy sauce. Freezes great too!

Ingredients

  • 1 tsp olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground, mild Italian Sausage
  • 4 cups low sodium chicken broth
  • 1 28 oz can crushed tomatoes
  • 2 tsp Italian Seasoning
  • 2 tsp dried basil, (can also use fresh)
  • 1/2 tsp salt
  • dash pepper
  • 1 tsp red pepper flakes, (or more to taste)
  • 3 oz 1/3 less fat cream cheese, cubed
  • 1 10 oz bag cheese tortellini
  • 3 cups fresh spinach

Instructions

  • 1)

    In a large soup pot, heat olive oil over medium-high heat. Add onions and cook in olive oil until softened. Add garlic and sauté together for about one minute.

  • 2)

    Add sausage, breaking it up as it cooks. Stir onion and sausage mixture until well-combined and sausage is cooked through.

  • 3)

    Add broth, crushed tomatoes, Italian seasoning, basil, salt, pepper, and red pepper flakes. Stir and bring to a boil. Once boiling, reduce the heat to low. Simmer, covered, for 10 minutes.

  • 4)

    Add cream cheese, tortellini, and spinach. Stir to combine, cover, and simmer for an additional 10 minutes until pasta is cooked and cream cheese is melted.

  • 5)

    Serve and enjoy!

    This was such an easy & very tasty soup to make. I had a little left over & froze it in individual containers for lunch. It freezes very well. Thanks for such delicious recipes!!!
