Few things are better than a hearty bowl of warm chili on those first cold nights of the season. This year, we turned to my mom, or as my daughter will one day call her, YaYa, for chili inspiration. The timing of this meal was perfect. The day was cold and dreary and this bowl was the perfect comfort.

This meal comes together quickly for a fast weeknight dinner or you can start it early in the day and just have it heating on low until you are ready to dish it up. If you are looking to do some meal prepping, this recipe is a good one to choose as it will continue tasting great for several days.

Grandma YaYa Inspired Chili

  • Cook time: 30 minutes

Perfect fall comfort in a bowl. Easy to make and tastes great for days. Perfect for those cold nights or for meal prepping lunches for the week.

Ingredients

  • 1 pound ground turkey, (Ground beef or chicken work too)
  • 1 15 oz diced tomatoes
  • 1 15 oz black beans in chili sauce, (I used Bush's)
  • 1 28 oz mild red chili beans, (I used Brook's)
  • 1 15 oz dark red kidney beans, rinsed
  • 1 packet chili seasoning, (I used McCormick)
  • 1 green pepper, diced
  • 1 small yellow onion, diced
  • 1 cup frozen corn kernels
  • 1 jalapeno, minced, (optional)
  • 4 cloves garlic, minced

Instructions

  • 1)

    In a large soup pot on medium heat, cook turkey, breaking into pieces until thoroughly browned.

  • 2)

    Add green pepper, onion, garlic, and jalapeno. Sauté until vegetables begin to soften.

  • 3)

    Add remaining ingredients, stirring to combine.

  • 4)

    Cook covered over medium-low heat until heated through, stirring occasionally. About 20 minutes.

  • 5)

    Serve with your favorite toppings: sour cream, shredded cheese, scallions, crackers, etc.
