Since working remotely, I have struggled with daytime snacking. It is hard not to walk into the kitchen every hour or, let’s be real, every five minutes. I was constantly searching for a snack and was either disappointed in what I was finding or I would eat several things just trying to satisfy my snack craving. I finally decided I needed to change my snack rut and these sweet and salty energy balls were the perfect answer. Packed with flavor, they are sure to squelch any snack needs. And at 90 calories each, they easily fit into a healthy lifestyle.

I often make these on a Sunday so that I have plenty for busy weeks. The 24 energy balls stay good for up to 3 weeks in the refrigerator.

Feel free to experiment with the ingredients. Add in chia seeds, try different nut butters, swap out the honey for maple syrup, or simply add in new nuts and candies. You really cannot go wrong making these!

Energy Balls

  • Prep time: 10 minutes
  • Total time: 1 hour

Quick and delicious snack that is under 100 calories! Make a bunch to store for several weeks.

Ingredients

  • 1 1/2 cups Quaker quick oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips, (I use milk chocolate)
  • 1/4 cup nuts, (I use either walnuts or pecans)
  • 1/2 cup unsweetened coconut flakes

Instructions

  • 1)

    Place all ingredients in a mixing bowl and stir until combined. If it is too dry, add more honey or peanut butter. If it is too wet, add more oats or coconut. The ideal texture is slightly sticky so that it will hold together when shaping them into balls, but there is really no way to go wrong here!

  • 2)

    Once combined and the desired texture is achieved, place the bowl in the refrigerated to chill for at least 30 minutes. I have chilled this overnight.

  • 3)

    Shape mixture into approximately 1 inch balls. Store in an air-tight container in the refrigerator for up to 2-3 weeks.

    Thanks for the recipe! I made some energy balls years ago, and they were delicious, but unfortunately, I didn’t keep the recipe. I will have to make these again!
