Greek Spinach Rice

Greek spinach rice is also known as Spanakorizo. Usually my husband and I just buy rice packets when we want a flavored rice, but I wanted something special for our Mediterranean inspired dinner. This recipe ended up being the perfect side dish to go with our Greek Tzatziki Sauce chicken pitas.

While this dish took longer to cook up than I originally anticipated (rice just requires extra patience), it was simple to throw together and was so delicious we will absolutely make it again. Rice packets are great for a quick side dish, but if you have a little extra time, this rice will add an extra special something to all your favorite meals!

Greek Spinach Rice (Spanakorizo)

Packed with spinach and spices, this traditional Greek side dish will add an extra something special to all your favorite meals!

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1 tablespoon garlic, minced
  • zest 1 lemon
  • 1 8 ounce bag spinach, chopped
  • 1/2 tsp ground cumin
  • 1 cup rice
  • 1.5-2.5 cups broth, (I used chicken broth)
  • 1/4 cup fresh dill, chopped
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons lemon juice, (or more to taste)

Instructions

  • 1)

    In sauce pan, heat olive oil. Add onion and sauté until translucent. Add garlic. Stir. Cook for another minute or until fragrant.

    Add lemon zest, spinach, and cumin. Stir. Cook until the spinach just begins to wilt.

  • 3)

    Add the rice, 1.5 cups broth, dill, salt and pepper. Stir into the spinach mixture until well combined. Bring to a boil.

  • 4)

    Reduce the heat to a simmer. Cover with lid and cook until rice is tender. Stir the rice occasionally, checking to see if more broth is needed. Add broth as necessary.

  • 5)

    Before serving, stir in lemon juice. Enjoy!
