Peanut Butter Butterscotch Rice Krispies

Growing up, these were my favorite treats. We never made the more traditional marshmallow treats and, frankly, I never understood why anyone would after having these! The melty peanut butter mixed with the sweetness of the butterscotch and the crunch of the rice cereal is perfect! As an adult, I do love a good marshmallow Rice Krispy treat, but these Peanut Butter Butterscotch Rice Krispies will always be my favorite.

These treats come together quickly, use just three ingredients, and make for a fun holiday (or everyday) snack! Plus, they make the house smell delicious.

Typically, I would make these in a standard 9×13 baking dish, cutting them into 15 squares, but you can also use cookie cutters to form them into fun shapes depending on the season! Since Valentine’s Day is right around the corner, I decided to make this batch into hearts. Quantities will vary depending on the size of the cookie cutter.

Warning: You will want to lick the bowl and spoon after making these. It is too hard to resist!

Peanut Butter Butterscotch Rice Krispies

  • Serves: 20

These treats come together quickly, use just three ingredients, and make for a fun holiday (or everyday) snack!

Ingredients

  • 1 package butterscotch morsels
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies, (more or less for desired texture)
  • Sprinkles, (optional)

Instructions

  • 1)

    Melt butterscotch and peanut butter in large pot over low heat. Stir constantly until melted.

  • 2)

    Add half of the Rice Krispies and mix well. Add additional cups of Rice Krispies until desired texture is achieved. Mix until thoroughly coated.

  • 3)

    Pour mixture into a greased 9×13 pan or desired cookie cutter shapes. If doing a cookie cutter, lay the cookie cutter on a flat surface, spoon mixture into cookie cutter, filling it completely. Gently lift cookie cutter up. Repeat until all mixture is used.

  • 4)

    Add optional sprinkles after the mixture is evenly spread or all shapes are made. You can skip this step if not using sprinkles.

  • 5)

    Carefully transfer treats to the fridge. Cool for at least 30 minutes before enjoying!
