Seven “Layer” Cookies

Making cookies around the holidays is one of my favorite traditions. For my family, there are a few cookies we have to make each year, otherwise it just does not feel like the holidays. For us, this means we always make Peanut Butter Blossoms and Grandma Mimi’s Butter Cookies. This holiday season I wanted to switch it up a bit, though, so I decided to make a new cookie recipe. Of course, we still made our family favorites, I just added a new one to the mix!

I love the traditional Seven Layer Bars, mostly for the butterscotch, so I decided to try and make it into a cookie. Let’s just say this new recipe is a keeper! For this recipe, the Seven “layers” are butter, sugar, flour, butterscotch, chocolate chips, pecans, and coconut. We made two versions, one with the coconut and one without. Both are delicious!

This recipe will definitely stick around. Not only is the cookie one of the best I have had, the recipe is really simple. Some cookie doughs take forever to mix together, then it can be so sticky, forming the balls is a challenge. Not these! The dough was so soft, that I was able to combine everything and plop all the rounded dough onto the baking sheets very quickly.

This dough will also freeze well. To freeze, wrap the unbaked dough in saran wrap and place into a freezer-safe bag. When ready to bake, thaw dough in the refrigerator and bake as directed below.

I know for many people, baking the same cookies every year is tradition, but if you have room for a new cookie recipe to find its way into your holiday baking, this one is worth it! These cookies will definitely be part of all our future holidays!

Seven "Layer" Cookies

  • Cook time: 12 minutes
  • Serves: 36

Butterscotch, chocolate chips, and pecans come together to form this perfect cookie! Top with coconut to create a Seven Layer Bar in cookie form. This recipe is sure to be your new favorite!

Ingredients

  • 1 cup salted butter, melted
  • 1 cup brown sugar, packed
  • 2/3 cup granulated sugar
  • 4 tsp vanilla extract
  • 2 eggs
  • 2.5 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • dash cinnamon, (or more to taste)
  • 1.5 cups chocolate chip morsels, (we used milk chocolate chips, but use your favorite!)
  • 1 cup butterscotch morsels
  • 1/2 cup chopped pecans, (or more to taste)
  • coconut flakes, (optional topping see step 6)

Instructions

    Preheat oven to 350 degrees.

  • 2)

    In a large mixing bowl, beat together the melted butter, brown sugar, and granulated sugar. If using a stand mixer, mix on low speed. Add the eggs and vanilla. Continue mixing until the mixture becomes a light brown. About 3 -4 minutes.

    Add in half the flour, mix until just combined. Add in the second half of the flour, baking soda, baking powder, salt, and the dash of cinnamon. Mix until well combined.

    Add the chocolate chips, butterscotch, and pecans. Fold to combine.

    Scoop rounded dough onto ungreased cookie sheet. The balls should be about 2 inches wide. I make these cookies slightly big, so I only place 8 cookies on a sheet. Bake for 12 minutes or until the edges are golden brown.

  • 6)

    If adding coconut, bake cookies for 6 minutes, remove from oven and sprinkle each cookie with the coconut flakes. Return to oven and continue baking for another 6 minutes or until edges are golden brown.

    Remove from oven and place on a cooling rack. When cooled slightly, enjoy!
