Scallops are a definite treat in our house. Living in the Midwest, it is hard to find quality scallops, plus, they are so expensive! Every once in a while, though, we will splurge and get about a pound of scallops. Since they are a rare dinner for us, the recipe needs to be perfect. I do not want to waste precious scallops! These Brown Sugar Glazed Bacon Wrapped Scallops are the perfect, decadent date-night/treat-your-self dinner.

This recipe is pretty easy, but it does require preparing the scallops. When preparing scallops to cook, rinse in cold water (do not soak in water as they will absorb it) and pat dry. If the scallops have their side muscle still, you will want to remove that. It is a tough part of the scallop that does not add any flavor. Also be sure to watch the scallops closely when cooking. They cook quickly and you do not want to overcook them! They should have a nice sear on them and no longer be translucent.

We paired the scallops with a simple rice and slaw salad. These would also be great with a veggie or over risotto. We just did a half-slice of bacon per scallop, but feel free to do a whole slice.

Brown Sugar Glazed Bacon Wrapped Scallops

Brown sugar, bacon, and scallops! The perfect decadent dinner!

Ingredients

  • 5 slices bacon, (If more than 10 scallops, add one slice per every 2 scallops)
  • 1 pound sea scallops (approximately 10), rinsed and patted dry
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 3 tbsp brown sugar
  • 1/2 tsp ginger
  • 2 tbsp butter

Instructions

  • 1)

    In a large pan, cook the bacon over low heat, turning every couple minutes, until the bacon is golden brown. You want it to be almost cooked, but not crispy. This way you can still mold it around the scallops.

    While the bacon is cooking, finish patting dry the scallops and lay them flat on a work surface. In a small bowl, mix together the salt, pepper, and garlic powder. Thoroughly season all sides of the scallops with the mixture.

    In another small bowl, mix together the brown sugar and ginger. Set aside.

  • 4)

    When the bacon is almost done cooking, remove from heat and cut in half. Remove excess bacon grease from pan.

    Wrap 1 half slice of bacon around one scallop. Secure with toothpick. Repeat with remaining bacon slices and scallops.

    Sprinkle half the brown sugar mixture over the scallops. Gentle press the mixture onto the scallops.

    Over medium high heat, melt butter in the same pan that the bacon cooked in. When butter is melted, gently place the scallops, brown sugar side down, into the pan on the butter. Top the scallops with the remaining brown sugar mixture.

    Cook the one side of the scallop for 4-5 minutes or until the scallop starts to turn white. Flip and cook the second side for an additional 2-3 minutes or until cooked through.

  • 9)

    Serve immediately. Enjoy!
