I can still remember the first time I tried gnocchi. I was in college and a friend of mine invited us over to make it and enjoy. I was blown away by how delicious it was and soon found myself seeking it out wherever I went.
These days, I typically just buy gnocchi instead of making it in order to save time. The store bought variety makes it easy to whip up delicious gnocchi dishes any day of the week!
This one-pot dish cooks up quickly and is very satisfying! The recipe can easily be changed to fit your needs as well. Consider these alternatives:
- Protein: Add in chicken, sausage, or edamame.
- Vegetables: Go wild with the veggies! Add in zucchini, corn, peppers, broccoli, etc.
- Sauce: Adjust the sauciness of the dish. Add in extra cans of tomatoes, marinara, or pasta sauce to the dish.
- Cheese: Add in your favorite cheeses. Don’t like goat cheese? That’s okay! Any favorite cheese will work!
Enjoy by itself or pair with a salad or garlic bread.

I have to say this was a 1st. Never had gnocchi before. This recipe was easy to make & will definitely make it again. I paired it with bacon wrapped scallops. Big hit in this family!!!!
