Samoa Cookie Pie

My husband loves the Samoa Girl Scout cookie. A few years ago for his birthday, I searched out the perfect dessert and ended up making him this amazing Samoa cookie pie! We decided to make it again this year for Pi Day (3/14).

This pie is dangerously good. Dangerous because it tastes delicious AND it comes together so easily. You’ll be tempted to make it every weekend! Half of the recipe is just “eyeballing” it. I gave measurement ranges in the recipe below, but know you really cannot go wrong with this one.

This pie is perfect for any occasion. It is definitely a sweet indulgence, but so worth it! If you do not want to eat it all at once, consider freezing individual slices. Be sure to thaw it out overnight, though! We have considered freezing slices, but we always end up eating the whole thing! To keep fresh without freezing, simply wrap it in plastic wrap and foil and keep in the fridge for about a week.

Samoa Cookie Pie

  • Serves: 8

Your favorite Girl Scout cookie as a pie! Delicious cookie crust topped with chocolate, coconut, and caramel!

Ingredients

  • 1 stick butter, melted
  • 1/2 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 1/2-1 cup milk chocolate chips
  • 1/2-1 cup sweetened, shredded coconut, (plus more for sprinkling on top)
  • 8-10 ounces sweetened condensed milk
  • 4-5 ounces salted caramel sauce
  • 3/4 cup milk chocolate chips, melted

Instructions

  • 1)

    Preheat oven to 350℉. Spray a 9-inch pie dish with cooking spray, being sure to get all sides and edges. Set aside.

    In a medium bowl, mix melted butter, brown sugar, vanilla extract, and egg. Whisk together until a smooth batter forms.

  • 3)

    Add the flour and salt to the batter mixture and stir until combined.

  • 4)

    Spread the batter mixture into the prepared pie dish. Smooth the top out and spread it up the sides just slightly. Bake for 12 minutes or until the sides begin to firm and the center starts to set.

  • 5)

    Remove pie dish from oven and evenly spread 1/2-1 cup chocolate chips on top. Then add 1/2-1 cup coconut.

  • 6)

    Drizzle the sweetened condensed milk evenly over the pie. Then drizzle the caramel sauce over the condensed milk. These do not need to be precise. Just drizzle until it looks good!

    Return the pie dish to the oven and bake for an additional 20-25 minutes. There should be some bubbling along the edges. Watch the pie closely towards the end so that it does not burn.

  • 8)

    Remove pie from oven and set aside to cool. Heat 3/4 cup chocolate chips in microwave until completely melted and smooth. Drizzle or spread the melted chocolate on top of the pie. This can be as fancy or simple as you want!

    Sprinkle some coconut flakes on top of the chocolate.

  • 10)

    Cool for 6 hours before slicing. Serve with a dollop of whip cream or vanilla ice-cream on top! Enjoy!
