Lasagna can be intimidating to make and traditional lasagnas are quite heavy with sauce and cheese. Wanting something to satisfy my lasagna cravings, but not take me all night to cook, I started making lasagna roll-ups. These Goat Cheese Spinach Lasagna Roll-ups are a unique twist on a traditional lasagna recipe. Not only are they easy to make, they are fun to make! Plus, they are just over 300 calories!
I love goat cheese, so any chance I get to use it in recipes, I do! If you do not like goat cheese, though, you can easily switch it out for 10 ounces of ricotta.
If you have kids, get them involved in this recipe! Rolling up the lasagna can be a fun task for them!
These are also an easy make-ahead freezer meal. For my husband and I, we do not need all 8 in one night. We typically cook up just four (cutting the sauce in half and sprinkling just half the cheese on top) while freezing the other four. To freeze, after rolling up the lasagna, place on a pan and put in the freezer for about an hour. After an hour, they can easily be placed into a freezer bag and stored. When ready to eat, pour marinara sauce into a baking dish, place the frozen rolls onto the sauce, then top with sauce and cheese. Cover with foil and bake at 350 for 45 minutes for 4; 60 minutes for all 8.
If you can, double the batch and freeze them. I love having these available for a quick, weeknight meal that looks and tastes like you spent hours in the kitchen!
We serve this with garlic bread or a side salad.
